Whole dried curry leaves — concentrated South Indian aroma in a shelf-stable form for spice blends and tempering.
Curry leaves are dried at low temperature to retain volatile aromatics. Rehydrate to release a citrusy, slightly bitter note characteristic of South Indian cooking.
